Té fotos i receptes meravelloses: My Baking Addiction.

Tasteu-lo i ja em direu!

Microwaved Lemon curd

Finally! We have a truckload of lemons in our tree waiting to be plucked. I love lemon, it's so versatile: for aromatising, peeling, juicing… My suggestion for today is to make lemon curd using the microwaves.

I was not aware of the existence of lemon curd until a few years ago, when my English brother-in-law entered the family. Lemon curd is a delicate, light paste that can be used as a spread on toasts, as filling in cakes, crèpes, cupcakes, or even in yoghourt. Those of us who enjoy our lemon, and those who have a sweet tooth that's not too sweet and prefer our desserts with a bit of a tang, will find in lemon curd a great ally to refresh and give a good kick to all sorts of sweet confections.

It's made out of lemon, eggs and sugar, it has an unctuous texture, and it's supposed to be tangy, but not sour. Most of the recipes I had come across so far required cooking in the baigne marie, but the recipe I propose to you today is cooked in the microwaves, and I can vouch that it comes out just lovely and right.

I found the recipe in a blog that I recommend a lot, if you don't know it yet, with wonderful recipes -and photography! It's My Baking Addiction, one of my favourite cooking blogs. I visit it often and I'm sure I'll be making lots of recipes from there.

By the way, this is the first entry that will be published both in Catalan and English, with the intention that they all appear in both languages from now on. Slowly but surely, we'll be translating all the previous entries too. Thanks, Helena, for the translations!

Ingredients
  • 200 g sugar
  • 3 eggs
  • 125 g butter
  • 200 ml lemon juice
  • The skin of 3 lemons finely peeled

Let's procede
In a microwaves-safe bowl, beat the eggs and sugar until smooth. Add the lemon juice, the lemon peel and melted (liquid) butter, and stir well until blended.

Heat the mixture in the microwaves on full power for a minute. Stir again, and heat up for another minute. Continue to do this until the lemon curd acquires a denser texture and coats the back of a metal spoon. It can take about 3 or 5 minutes overall. Pour it a glass pot with a lid and keep in the fridge. It lasts well for a couple of weeks. Now try it and tell me what you think!
